50% van de wijn vergist in nieuwe Hongaarse vaten met regelmatige batonnage. De rest in rvs tanks. Na de vergisting rijpt de wijn nog zo’n 10 maanden in rvs tanks met regelmatige batonnage.

Made with Garnacha Blanca from his family’s vineyard between the Iregua and Leza valleys, Víctor Ausejo’s brilliant white is entirely aged on its lees in stainless steel. Focused and perfumed, with notes of thyme and white pepper, some fennel and honeysuckle and lots of cool-climate acidity and a waxy, lanolin finish.
